i just really felt like i needed to post something on a more cheery note. i don't really have anything "cheery" to talk about, but i do have two yummy recipes to share.
josh and i tried this one out wednesday and it was very easy and very yummy!
Baked Potato Soup
-1/4 cup butter
-1/4 cup chopped onion
-1/4 cup all purpose flour
-1 can (14.5 oz) chicken broth
-1 can (12 oz) evaporated milk
-2 large or 3 medium baking potatoes, baked (cooked them in the microwave. quick alternative)
-toppings: cooked, crumbled bacon; shredded cheddar cheese; sliced green onion; sour cream
melt butter in large saucepan over medium heat. add onion; cook, stirring occasionally, for 1 to 2 minutes or until tender. stir in flour. gradually stir in broth and evaporated milk. scoop potato pulp from 1 potato (reserve skin); mash. add pulp to broth mixture. cook over medium heat, stirring occasionally, until mixture comes just to a boil. dice remaining potato skin and potato(es); add to soup. heat through. spoon into bowls. sprinkle each wiht toppings.
(i left out the potato skins because i prefer it that way and it was even yummier, i think)
this recipe is from my mom's friend Sandy. it is SOOOOO easy.
Chicken Pot Pie
-6 to 7 chicken breasts
-4 stalks celery
-1 med. onion
-1 pkg. frozen mixed veggies
-4 unbaked pie crusts (i recommend the pillsbury brand. they are wonderful!)
-2 cans cream of chicken soup
cube and cook chicken. saute celery and onion until soft. combine all ingredients in a bowl. pour into unbaked pie shell. top with second unbaked pie shell. seal crusts together and cut slits in top to allow steam to escape. bake at 350 for 35 minutes or until golden.
this will make two pies. i usually make both and freeze one. i made the mistake of trying to just freeze the filling and that didn't turn out well. you need to go ahead and pour it into the pie shell and then freeze.

I'm going to give the baked potato soup a try for Justin. I hope I don't burn it!
you should try it yourself. you might actually start to like soup!
Brooke, I made the potato soup last night...it's really yummy and the best part is that it's easy and quick!
